A researcher from the University of Virginia insists that the theory claiming that eating so-called “bad” carbohydrates will make you fat is untrue. He came to this statement after evaluating peer-reviewed, scientific research on carbohydrate consumption, glycemic index and body weight.
He considers that carbohydrates are not the enemy, so there is no reason to be eating fewer of them. According to his research, people who consume high-carb diets tend to be slimmer, and often healthier, than people who consume low-carb diets.
The article appears in the October issue of the Journal of the American Dietetic Association.
